Josephine

When Josephine arrived in Australia from France in 2009, she found Melbourne's macarons lacking in flavour and texture. Already a passionate macaron maker, Josephine thought Melburnians would prefer the quality of an authentic French macaron. Her first small batches made from home were received with great enthusiasm and Macarons by Josephine was born.

Josephine was taught the fine art of macarons by her aunt – a passionate food stylist and cook. Her macarons (not to be confused with coconut macaroons) are made using a secret family recipe, the most important ingredient of all being patience. Josephine was previously a florist and loves to make macarons that stimulate both taste and smell. She experiments tirelessly with combinations of flavours and fragrances to create the unexpected.

In a very short time, Josephine has gone from making just a few small batches to supplying leading Melbourne establishments such as Enoteca on Gertude Street and Earl Canteen. She also came runner up in Melbourne's 2010 Best Macaron Competition.
